Mom's Vegetable Rice

I like this Mom's vegetable rice recipe in fact this one is the first things i have learnt as i started cooking. Simple and fast, that's what i do find all the recipes which i can cook fast. Mostly after my work i hardly have time to cook. So this one you can make in 20 Min's.

Ingredients:

1 and 1/2 half cup of cooked rice
2 potatoes cut into 2.5 cm long slices
2 carrots cut in similar size
1/2 cup of frozen peas, defrost before using
1/2 lime

2 tablespoons oil
half teaspoon of turmeric
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon Channa dal
2 green chilies, cut into small pieces
few curry leaves
bunch of coriander leaves


Recipe:

Heat oil in a pan and add mustard seeds, when mustard starts to crackle add urad dal, Channa dal and turmeric. Now add green chilies, curry leaves, carrots and potatoes. When potatoes and carrots are fully cooked add green peas. Fry for another 5mins. Mix cooked rice and take care not to crush the rice. Take out from the heating plate and add lemon. Finally garnish with coriander leaves.
